Appam is a South Indian fermented rice pancake, so why is a Vietnamese woman selling it in a Singapore hawker centre?

Mr Appam was opened in December 2021 by Nguyen Thi Kieu Hanh, a Singaporean PR who used to be a homemaker before she became a hawker.

After her husband suffered froma stroke, Nguyen Thi Kieu Hanhde, who used to work as a cook at Vietnamese noodle chain Nam Nam, bid for a hawker stall at Maxwell Food Centre.

But as she was unfamiliar with the hawker stall tendering process, she ended up with an Indian food stall.

Instead of giving it up, she decided to sell appam as it was one of the Indian foods that was not already being sold at the hawker centre. She spent four months perfecting her recipe by trying appam at other stalls and watching YouTube videos. She also contacted chefs who knew how to make the dish so she could learn from them.

Now, she makes the dish like a pro and is one of the more popular stalls at Maxwell Food Centre. In fact, in July 2023, Vietnam’s Minister of Foreign Affairs Bui Thanh Son and Singapore’s Foreign Minister Vivian Balakrishnan ordered her appam during a meal at the food centre!

This is the first time in my life that eight people approached me to ask where I had purchased my food from!

And I can't blame them — the colourful, half-spherical dish is quite eye-catching.

I visited the stall on a weekend afternoon and it wasn't too crowded. I waited around 8 minutes for Nguyen Thi Kieu Hanh to prepare my appam and through the glass case, I watched her masterfully cook it.

The menu features a mix of sweet and savoury options and I ordered one original appam - which came with two pieces of appam, orange sugar and coconut gratings - as well as a sausage cheese appam.

It is actually my first time trying appam so I was pleasantly surprised. The appam itself has a spongy texture in the centre while the edges are contrastingly crisp. The coconut gratings and orange sugar add a lovely sweet touch!

The sausage and cheese rendition was interesting, a little like a pizza. I was surprised that the appam could go either way — sweet and savoury. What a versatile dish!
