Established in 2018, Big Bowls Project is a new generation hawker stall that specialises in Muslim-friendly salmon rice bowls. These are conveniently packaged and presented, making it ideal for the busy, fast-paced office crowd. Their salmon bowls come in different variations with marinades like mentaiko, truffle oil and even sze chuan black bean. You can also customise your rice bowls by choosing two sides to pair with your salmon. Options include Japanese cucumber, cherry tomatoes, roasted edamame and half an avocado. Do note that you have to top up for the half avocado and roasted edamame!
One of the owners, Habibah, shares that she used to make salmon bowls at home and experiment with different flavours herself. Eventually, this inspired her to set up her own hawker stall.
I adore salmon, so I was excited to see how Big Bowls Project would fare. The past few times I visited the Amoy Street Hawker Centre, they were closed, so when I caught them one early weekday afternoon, I rushed over to place my order. While the hawker centre was relatively empty, they were already sold out of many dishes.
I eventually settled for the homemade recipe salmon bowl and this came with a large slab of the dish, half an avocado, an onsen egg and my choice of tomatoes. I love how the creamy avocado added a chunky, smooth texture when mixed into the rice. The salmon itself was also well-cooked and moist — just the way I like it! Overall, I can see why the sell out so fast. If I were to work in the CBD area as well I’d get this too!
