Despite being a Michelin Bib Gourmand hawker, Beach Road Fish Head Bee Hoon is humble about its status and does not display any awards or newspaper clippings at the front of its store. However, this does not stop a long queue from forming at the front of the shop every single day. They’ve been at Whampoa Food Centre for over a decade and the stall is run by a husband and wife duo. Before this venture, the husband also was in the hawker business, so he is very skilled in his craft. They both wake up at 5 am daily to prepare the ingredients, so plenty of labour and love goes into their food.

When I reached around 2 pm, they were already almost sold out. I luckily was the second last person who was able to snag a bowl. The Fried Fish Bee Hoon ($4.50) was a simple yet well-executed dish and the fried fish was crisp on the outside yet soft on the inside. Despite being soaked in the soup for quite some time, the texture still remained good. They did not use an excessive amount of evaporated milk in their so their soup was still light and not too cloying. Springy and slippery with plenty of bite, the noodle complemented the fish and soup, making it an all-rounded dish that was deserving of its title.
