Covent Garden Kway Chap was founded in the 1960s by Mdm Chua, who is currently in her 90s. The business has since been taken over by her two sons but she pops by once in a while to work.
The family-run business specialises in kway chap, which essentially is pigs intestines paired with flat rice noodles.
When ordering your food, you'll see either Mdm Chua or her sons stirring a large pot filled with dark braising sauce. Soaking in it are various offals such as large pig's intestine, small pig's intestines, pig skin and pig's stomach. There are also ingredients such as braised egg and tau pok (beancurd).
A one-person's portion starts from just $3 and it comes with a standard serving of offals and half an egg. You can always customise your dish to your liking by picking and choosing the ingredients you like.
I visited the stall on a Saturday morning and there was a queue of around 3 to 4 people in front of me. This went along rather slowly as the hawkers had to painstakingly select and cut each ingredient for the customers.
I ordered a large bowl of kway (rice noodles) and a standard set of offals. I also added some pork belly.
One concern that I have with offals is the cleanliness and smell. I did not have that problem here and the offals were thoroughly cleaned and well-braised. Pair these with the stall's tart chilli sauce for a punch of flavour.
The kway was also just the way I like it! Thick, silky, with a good bite to it. It's worth the queue I'd say!
