There are many stalls out there selling fish soup, but to be listed in the Michelin Bib Gourmand Singapore 2021, there must be something spectacular that makes this stall stand out amongst the rest.

Apart from the fresh fish slices that are used, Kwang Ke uses batang fish, which has a softer and chewy bite to it. It’s also sweeter in taste and one that is loved by many. The fish stock is boiled with fresh fish and fish bones for hours to get that depth of flavour in the soup.

Second generation hawker Jason Tan has been in the business for many years, learning the ropes from his father since he was 13 years old. Located at Newton food centre, the pricing for the soup is generally a little more compared to ones at other hawker centres, but I’d say it is pretty worth the price for the quality of fish used.

Newton Food Centre was once a place known for its intense touting, but has since cleaned that up in the last few years, making it a less stressful place for patrons to gather and dine in. Kwang Kee Teochew Fish Porridge is located near the end of the front aisle, and when I was there slightly past the lunch hour, there wasn’t a crowd or a queue there. Getting served with my bowl of fish soup was even faster than usual – about less than 5 minutes and I had my soup served.

On first look, it look plain and diluted – for the clear soup just looked like pieces of vegetables and sliced fishes were put into a bowl of hot water. But because of its clear and transparent colour, there is a lightness in the taste, but still carries a great depth of flavour in it.

Needless to say, the fish slices were fresh, chewy and sweet. Remember to get the preserved soy bean sauce to give that extra tinge of saltiness to it.
