A name that is well-known in Singapore, Hawker Chan is the first hawker stall in Singapore to receive a Michelin Star, and it is also known as "The Cheapest Michelin-starred Meal In The World”. It was started by Chef Chan Hon Meng, who grew up as a farmer's son in Ipoh, Malaysia. There, he helped his family prepare meals daily, which led to him developing a passion for cooking. When he was 15, he left his hometown for Singapore to work. There, he took up an apprenticeship under a Hong Kong chef who taught him the skills that have helped him get to where he is today. That was also where he learnt and developed his very own soya sauce chicken recipe. Finally, in 2009, he opened his own stall, Liao Fan Soya Sauce Chicken Rice & Noodle, in the bustling Chinatown Complex Food Centre. In July 2016, he was awarded his one Michelin Star from the Michelin Guide Singapore. The rest is history.
While the brand has many branches across Singapore, the best place to enjoy it is at the original stall at Chinatown Complex Food Centre. It isn’t surprising that the shop garners long queues daily, so expect a long wait. The dish honestly doesn’t look the most exciting when you receive it, but the magic only happens when you take your first bite. The chicken here is thick, moist and generously coated in a savoury dark sauce. This adds a nice sweetness and herbal touch to the perfectly cooked chicken. The rice, which is warm and extremely fluffy, soaks up the rest of the dark sauce so it too is packed with flavour. It isn’t necessary, but if you want to add some heat to the dish, you can add some of the provided chilli sauce for a little zest and spiciness. Despite being simply executed, I can understand why people adore the food here so much. Having previously experienced the food from their other chain stores, I can safely say that trying the soya sauce chicken from the original stall is a must to experience this award-winning dish in all its glory.
