Lao Beijing isn't your typical Chinese restaurant. The dishes here aren't what you'd find on a normal menu but are given unique, modern twists.

It was established in 1996 and is one of the more popular Chinese eateries in Singapore. Their cuisine philosophy is to unite old and new and their chefs are often thinking of new was to innovate and give new interpretation to classics that have popularised Chinese cuisine from all over the world.

Some special mainstays on their menu that have become signatures are the Grilled Barramundi with Collagen Soup Base, Firecracker Chicken Nest, Grilled 'Mala' Lamb Leg, Lao Beijing Peking Duck and 'Bakkwa' Bacon Salad.

If you're looking for a place to find fusion Chinese food, this really takes the cake.

The last time I dined at Lao Beijing was many years ago so I was excited to see how the food at the restaurant was like now.

The current menu seems to have merged with one of the parent company's now-defunct brand, Lokkee, and the menu has items from both concepts.

My dining companions and I ordered classics like the Grilled Barramundi with Collagen Soup Base, Firecracker Chicken Nest, Wagyu Beef Truffle Hor Fun and Awesome Flaming Pineapple Beef.

It is hard to choose a favourite because all the dishes are unique and delicious in their own way.

The Grilled Barramundi with Collagen Soup Base is great for sharing and the fish comes served in a massive platter, paired with ingredients like fresh vegetables, tofu and beancurd skin. Upon being served, the waitress douses the fish in a luxuriously rich collagen soup base. This was an absolute treat and I enjoyed it with rice.

The Awesome Flaming Pineapple Beef is good if you want something Instagram-worthy. Here, the beef is served in a large pineapple and set ablaze when put on the table. But it isn't just gimmicky — the beef actually tastes good and is shockingly tender.

Firecracker Chicken Nest is a unique take on a popular Chinese dish. The fried chicken comes with 4 eggshells on the sides but these actually aren't eggs — it is a mango puree! Dip the fried chicken inside for a sweet surprise.

The final dish is the Wagyu Beef Truffle Hor Fun. This was an absolute treat and the beef slices were so tender. I thought that the truffle gravy would be too overpowering and was surprised to find that they did not overwhelm the rest of the flavours.
