One would think that they could only find fluffy, Japanese-style pancakes in a cafe or restaurant setting. But SweeT.Rex is here to change things up!
The unique establishment, which opened their first stall at Alexander Food Centre, has been in the Singapore's hawker scene for a few years now.
It was started by a husband-and-wife duo who wanted to offer something more children-friendly to kids who visit hawker centres. They also felt like good food finds were often hidden away in hawker centres and were inspired by that. They began conceptualising the idea in 2017. The wife would make the souffle pancakes while the husband worked on the bakery side of things and came up with new products.
Their Alexander Food Centre has sadly shuttered but they have opened a new stall at Maxwell Food Centre in December 2022!

I'm a huge fan of Japanese-style souffle pancakes and I've only ever had them in cafes in Japan and Thailand. So, when I found out that there was a hawker stall in Singapore that sold these, I was intrigued and admittedly, a little skeptical, especially since these pancakes are very hard to make.
But these pancakes turned out to be shockingly good — even better than some of the ones I've had in the cafe!
As these are made from scratch on the spot, I had to wait around 20 minutes for them. But it was well-worth the wait! Each serving comes with two jiggly pancakes and there are flavours like chocolate, caramel and original. I got the original.
The pancakes also come with maple syrup and a pack of butter which you can use to garnish your pancakes. But honestly, even without these, the pancakes were so good! They were extremely light and fluffy and it felt like I was eating a cloud. For the price point, this is truly a steal and I don't see why I should patronise an expensive cafe to enjoy this when I can have a much better, more affordable option.
