Poh Preserved Veg Hor Fun was at Empress Road Food Centre for seven years before they moved to their current location at Chinatown Complex Food Centre.
The stall is run by Chef Ng, who used to cut his teeth at hotels like Shangri-La, as well as Kim Huat restaurant in Clementi.
Generally, Chye Poh Kway Teow is found in Teochew restaurants so it's quite surprising to find it in a hawker centre setting.
And Chef Ng's sells two variations of it — oyster preserved vegetable hor fun and preserved vegetable hor fun.
Apart from that, he also sells fragrant Prawn Paste Chicken.
I've actually never tried chye poh kway teow before so this was a new experience for me!
When I visited the stall around 3pm on a Saturday afternoon, just a little after the lunch crowd, the stall was empty save for one other customer in front of me. I ordered the oyster preserved vegetable hor fun and while waiting for it, I watched Chef Ng deftly fry it up in his wok.
I didn't really know what to expect but boy was I impressed when I first bit into. First impressions, it tasted like a marriage of oyster omelette and hor fun, two of my favourite things. The wok hei was incredible and the entire dish had a lovely, smokey taste. I was afraid that the oysters would be unfresh because that's usually the case for hawker fare but I'm happy to report that these were plump, fresh and briny. What a find!
