The humble hawker stall was founded by Lim Kwok Seong who is from Ipoh, Malaysia. He had moved to Singapore decades ago to find a home.
He had previously worked 6 years at a Chinese banquet restaurant in Ipoh and wanted to learn more about Singapore's street food culture. To do so, he worked with hawkers before learning how to make yong tau foo and kai yik.
Eventually, he decided to start something of his own because he felt like the money was not enough, especially since he has a family to take care of.
So, he pumped in $30,000 and set up a hawker stall at Tanjong Pagar selling Japanese food because his wife loves the cuisine. But business didn't do well for a year.
Things changed after a Japanese customer who patronised his stall often decided to teach him how to make several dishes.
After that, things began to pick up and Lim's business began to do well. He eventually moved to Chinatown Complex Hawker Centre and has been there ever since. Now, many know of his Japanese food and flock to his stall.
Despite visiting the stall at 3pm on a Sunday, there was still a neverending amount of customers. But I managed to get my food quick because of how efficient the chef was!
I ordered myself the unagi which cost less than $10 — an absolute steal in Singapore! This came with a mound of fluffy rice, shredded vegetables and miso soup.
I honestly wasn't expecting much but boy oh boy did this unagi take me surprise! It was well-marinated with teriyaki sauce and was extremely tender and fell apart easily with a slight prod of my chopsticks. Simply eating this and rice was an absolute matchmake in heaven and I am curious to see how their other dishes will taste!
