Located at the aisle of the large middle walkway in the food centre, Red Stove Fried Prawn Mee is helmed by the husband-and-wife duo, Mr and Mrs Chua, who have been serving Hokkien Mee for more than 40 years. As such, it is not uncommon to see the stall owners greeting the regular customers - whether they are there to patronise his stall.

The noodles are cooked with a prawn soup broth that Mr Chua takes a few hours each day to prepare where he also adds fried chicken, ikan bills and prawn head into the mix to make it tasty and flavourful. He picked up the skill of frying noodles from his elder brother in 1972 and only cooks the noodles when the order comes in. Red Stove Fried Prawn Mee also uses less lard to make it a healthier dish to be elderly-friendly.

This humble and flavourful dish is a comfort food to many - myself included. When done right, it can be so addictive and I do crave for more Hokkien Mee in the days after. For Red Stove Fried Prawn Mee, it may look like any other ordinary plate, but the yellow noodles mixed with the thick rice vermicelli noodles was so delicious I finished my plate in 15 minutes. The ‘wok hei’ aroma, though a tad faint, was a surprised welcome. As the noodles is fried with prawn broth, the gravy was packed with flavours with a strong garlic taste.

The small option comes with 2 fresh prawns and do remember to ask for more chilli because really, what’s a plate of fried prawn mee without the sambal sauce? Though it can get really spicy, I’d rather drink glasses of milk than to sacrifice on the spice as it enhanced the dish greatly.
