Lagoon in a Bowl is aptly named after it's unique rice bowls featuring premium ingredients like steak and salmon atop a bed of pea blue rice.
The stall is helmed by Zilch Ng, a young hawker who left his previous job in the IT industry to follow his passion for food.
What's impressive is that most of Zilch's culinary skills are self-taught or picked up along the way of his food journey.
Prior to setting up Lagoon in a Bowl, he ran another food stall at Lavender with a similar menu. However, he decided to scale down and focus on a tighter menu when he started Lagoon in a Bowl so he can have more consistency and control over the quality.
With only three items on the menu — Mentako Salmon Bowl, Mentaiko Wagyu Beef Bowl and Surf & Turf Bowl (both salmon and beef), making a decision here was easy.
I settled for the Surf & Turf bowl which has both so I could try both proteins. Here, a bed of brilliant blue pea rice was topped with freshly-prepared salmon and Wagyu beef, which were garnished with a generous amount of torched mentaiko sauce. On the side, you also get corn, cucumber and cherry tomatoes for your greens, as well as a jiggly sous vide.
I suspect that the proteins here are all sous vide because the texture of the beef and salmon were fork-tender and melt-in-your-mouth, which is hard to achieve with any other cooking technique. The rice also was slightly sweet and fluffy, complementing the other components perfecty.
While it is $16 for the Surf and Turf rice bowl, I personally feel like it was well-worth it considering the quality of the ingredients. I can definitely see myself forking out that kind of money for their food again.
