When it comes to Kway chap, it's more than just the food. It's about the combination of both the braised ingredients or sides with the kway, as well as the soup and chilli, that makes this dish such a pleasing and extreme dish.
The stall has been there for over 30 years and has been a staple with many of the residents there. Ask anyone there and they will probably recommend you this stall for a hearty meal.
The lady behind all the cooking is the lady boss, who took over from her father. Sometimes, her daughters also help with mending the stall as well.
What makes this stall stand apart from the others is their friendliness. The lady boss, while busy making the dishes for the other customers, would ask strike a chat with them , and for the older folks, she asked them to be seated so that they wouldn't need to stand and wait.
Braised for many hours to get the flavour out, Kway Chap would be something worth the wait if you fancy offals and intestines.
Ying Yi Kway Chap has got to be one of the better kway chap I've had for many years.
Perhaps it's the total experience of the friendly neighbourhood vibes that I get from the lady boss, but to witness how she also treats almost all her customers with a smile is one of the reason why people go back for more.
Served with a variety of sides such as braised eggs, intestines, tau pok, and tau kwa, pig skin and fishcake, the Kway Chap is made with a special blend of spices and herbs, giving it a unique and flavorful taste. The kway is thin and chewy, doesn't break when scooped. The soup isn't too salty as well, which makes it perfect to gulp down with the more flavourful sides.
Of course, if anyone fancies spice, eat this with the chilli.
