Would you believe that before moving to its busy stall at Amoy Street Food Centre, Pepper Bowl was once located in Singapore Polytechnic Food Court 4?

The owners, husband and wife duo Mosses and Waynna, did so in 2012 because they wanted to get to spend more time with their son as the hours at Amoy Street Food Centre are more flexible (11am to 3pm, only on weekdays).

Prior to working at Singapore polytechnic, Mossess was a self-taught cook who wanted to fulfil his mother's dream of opening a restaurant and used to manage a now-defunct family-run restaurant in Joo Chiat called My Mum's Place.

With this being one of the more popular stalls at Amoy Street Food Centre, I had already anticipated there to be a long queue and I was right.

I reached the place around lunchtime and it was packed. Thankfully, the queue moved along relatively fast and I finally managed to get my food.

I ordered the Black Pepper Beef Rice and it seems like a simple dish, really — tender slices of peppered beef atop a bed of white rice, paired with a jiggly sous vide egg.

But the secret is in the texture and marinade.

The beef here is extremely tender with a good amount of chew to it. It had been marinated in a savoury, slightly sweet sauce that had a good amount of pepper in it, but wasn't too overpower. The egg also help lend a creamy consistency to the dish, which I really enjoyed.
