While Singapore is home to a number of hawker stalls that specialise in braised duck dishes, Chuan Kee Boneless Braised Duck is one that is listed under the Michelin Bib Gourmand, taking it a notch higher than the rest of the competition. They’ve been in operation for around 15 years and never fail to have snaking long queues that last beyond lunchtime. It is owned and operated by a young man named Huang Ming Yu who first began cooking braised duck at the tender age of 15 for his cousin's stall, He Ji Braised Duck. When he was 23 years old, he finally opened a stall of his own and here, he had the freedom to present and sell dishes that are created from his original recipes. All the ducks are freshly sourced from Malaysia and are prepared using Teochew-style recipes. While his staff have been taught his recipes and are the main ones manning the stall, he personally braises the ducks by himself to keep things consistent. Following the success of his first store at Ghim Moh Road Market & Food Centre, he opened a second stall at Chong Pang Market & Food Centre, which is mainly run by his wife.

This plate of Michelin Bib Gourmand braised duck rice certainly lives up to its name and it has continued to be of exceptional, consistent quality over the years. Here, tender slices of Teochew-style braised duck lie atop a bed of fluffy, flavoured rice and is finished off with a generous drizzle of dark sauce. Many places that serve braised duck in Singapore tend to push out dry, overcooked duck that is barely palatable. However, the duck here at Chuan Kee is extremely tender and packed full of flavour. This pairs excellently with the rice that is cooked in a broth that gives it an aromatic herbal flavour that gives the dish plenty more character and dimension. If you want an extra spicy kick, add a dash of their homemade chilli to heat things up; it definitely brings out the flavours of the duck and makes the dish more exciting! It is evident that there is plenty of careful attention to detail as even their soup is well executed. It isn’t just a bowl of liquid MSG; it has a strong, robust herbal flavour that is the result of hours of boiling. With so much effort and detail put into every component of this seemingly simple dish, it is no wonder that the food here such a huge hit amongst everyone!
