When it comes to a bowl of fish soup, it is truly the soup base that makes or breaks the dish. The soup is simmered in long hours with fish bones, chicken or pork chunks, herbs and spices. For Heng Lee, though it is served in a clear soup base, you can tell by the flavour that it has been cooked for long hours to produce a rich taste like that.

For variety of options, there are mostly on the carbohydrates that goes with the soup – whether rice, bee hoon, noodles or purely just fish soup. Of course, the options for fried or steam fish, makes a whole lot of difference too. I’d say go for the fresh fish to get that freshness of the seafood, but if you prefer a light batter and more chewy bits, then go for the fried fish.

To counter the fishy taste, most chefs would put tomato and bitter gourd to give it a more balanced taste. Of course, chilli options (cut chilli and soya sauce) for those who are looking for an added layer of spicy aftertaste.

Fish soup for me usually means fresh or fried fish, with a bowl of rice. I personally feel that noodles or bee hoon do affect the taste of the soup when cooked together. For Heng Lee, I didn’t have to wait long despite being there during the peak lunch hours, probably about 15 minutes or so.

The clear soup may seem misleading, looking like a bowl of diluted water, but it was full of flavour, a rich bowl umami taste. In it, there were vegetables, tofu cubes, tomatoes, and fried pork fat, along with fresh fish slices. I really enjoyed the fish slices – it was thick, fresh and juicy, and it doesn’t break when picked up by chopsticks. With the soup that goes with it, it is a warm, hearty meal that warms the tummy.
