Most people would probably have chanced upon a Ma Bo Lor Mee stall in a hawker centre. The chain specialises in, as its name, lor mee, and is also well-loved for its insanely crispy fried fish.
The stall was established in 2013 and is run by a woman called Li Xia and her business partner. They were inspired to set up the business when the business partner whipped up some lor mee for a gathering. This was well received, so they decided to try their luck and open a hawker stall. Evidently, this was a good idea because now, they have multiple outlets islandwide and are one of the more prominent lor mee stalls in the hawker scene.
The lor mee recipe was passed down from Li Xia’s partner’s grandmother and the gravy is made from seven herbs and is prepared the night before so that the flavours are given ample time to mix.

I’ve eaten the lor mee at Ma Bo Lor Mee multiple times so I decided to try their Fried Fish Laksa out of curiosity. For just $4, I got a massive bowl of laksa that was laden with huge pieces of crispy fried fish — upon looks alone, I was impressed!
As Ma Bo Lor Mee’s speciality lies in lor mee, I’ll be honest and say that I wasn’t expecting much from the gravy. However, I was pleasantly surprised that it was rich without being too overwhelming. The rice noodles were also al dente and had a good bite while soaking up all that delicious laksa soup. But what really stole the show was the fried fish. These were shockingly crunchy and very crispy despite me not eating it immediately. The fish was also not overwhelmed by batter like some fried fish are and I was pleased to find that there was an ample amount of white flesh hidden beneath the crisp exterior of the fish.
So, the next time you pay them a visit, maybe you can try their laksa instead — I know I will!
