Just like the stall’s name, the chef hails from Yuan Lang in Hong Kong and he came to Singapore in 1988 because his boss sent him over. He liked the place so much that he got his PR citizenship in 1991 and set up his own char siew stall at a coffeeshop in Clementi. In 1996, he moved to Tiong Bahru Hawker Centre and his stall was quite famous. However, in 2006, he decided to move to Indonesia to work at a place called Hotel Mulia Resort. But his heart belonged in Singapore and eventually he returned and set up a stall at Tanah Merah hawking char siew. Within half a year, he decided to move to Chinatown Complex instead and he has been here for 3 years. However, he has stopped selling char siew as he finds it quite a hassle to make. Instead, he has decided to specialise in soya sauce chicken and kampong chicken. But that doesn’t mean the recipes are simple — the kampong chicken here is poached in a special secret sauce with 26 to 27 different kind of herbs like Japanese dried scallop and octopus. Because the sauce is so concentrated, he does not even need to add MSG! Unfortunately, he isn’t planning on passing the business on to anyone because despite trying to, none of his apprentices have managed to successfully pick up his skills.
I really wanted to try the soy sauce chicken but unfortunately, it was out of stock by the time I arrived. Hence, I got the kampong chicken thigh noodles which was a blessing in disguise. Kampong chicken is known to be uber tender and juicy and the chef really managed to bring out its flavours with his superb marinade. The noodles were also perfectly al dente with a nice spring to it. The accompanying chilli also packs a punch and I would slather it all over the chicken, but the chicken tasted too good on its own. Portion size also was filling but I wish it was larger because the food was seriously too good!
