Those familiar with Singapore's food scene would know Hong Heng Fried Sotong Prawn Mee.
This stall has received the Michelin Bib Gourmand for 7 years consecutively and on the Michelin guide, the food is described as: "cooked-to-order, the noodles stir-fried with sliced fish, squid and prawn and served with homemade chilli sauce is a favourite".
The humble stall, which only sells Hokkien mee, is helmed by Manfred Lim, a third generation owner who took over the business from his uncle.
The stall was not always located at Tiong Bahru Hawker Centre. Previously, it was at the old lau pat sat before moving here in the 1980s.
Despite only having one dish on the menu, Manfred is always busy and his stall sees snaking long queues all the time. He wakes up at 6am every day to prepare the food and starts selling at 10.30am. At 2.30pm he takes a break for lunch and after which he will continue selling leftovers till he is sold out, or till 4.30pm.
I've been eating the Hokkien mee from Hong Heng Fried Sotong Prawn Mee for years and it is one of my favourite Hokkien mee in Singapore.
When I visited late one weekend afternoon, the stall, as always, had a snaking long queue. I thankfully managed to order my food after 15 minutes of waiting and it was served to me piping hot.
What I like about the prawn mee here is the stock. It seems into everything — the noodles, the prawns, the squid, the lard. Yet, at the same time, it isn't overpowering or fishy.
This sloppy plate of goodness also has a decent amount of wok hei from Manfred's skillful frying technique.
Is it worth the queue? I feel so.
