Duck Rice has always been one of the well-loved dish by the locals. As with most braised duck rice stalls, they also sell other food options like Kway Chap, which is think rice broad sheets in savoury soup, served with a plate of ingredients.

With so many stalls located at Tiong Bahru Food Centre, it is hard to stand out, but perhaps serving the classic duck rice reaps it’s benefit because the queue for it wasn’t too long compared to other newer stalls. The area is also generally very clean as well as sunny (with a lot of sunlight coming in), and a very central area, therefore the crowd of customers are constant.

Do go early and avoid the peak hours because it not only gets crowded and packed, it is not easy to find a space to sit.

Braised food also means that it takes a lot of time to cook the duck and braised ingredients for the spices and aroma to soak into the meat.

For that, do add-on the other braised ingredients like egg and tau-pok to elevate your otherwise classic hawker food.

Despite me going during the peak lunch hours, I actually didn't have to wait too long to get my bowl of kway chap. It wasn't the longest or shortest of queues, but I felt 10 minutes was good enough for the wait.

The soup of the kway chap was so aromatic, slightly-salted and a nice hearty touch to it. Of course, the side plate of braised ingredients is such an important factor in kway chap.

The base ingredients include offals, intestines, fish cake, tau pok, tau gua, etc. The intestines were chewy and clean, braised ingredients flavoured properly.

Rice broad sheets, also known as the 'kueh' was smooth, silky and more importantly, it doesn't break when scooped.

Don't forget the chilli!
