Eddy’s was started by the humble Chef Eddy Wan, who has ten years of cooking experience under his belt. He actually was born and raised in Malaysia and when he came to Singapore to hone his culinary skills at a hotel, he dreamed of opening his own eatery. After his stint in the hotel, he became a private chef on a luxury yacht when he was just 25 years old and later on, he trained in a restaurant before setting up his humble hawker stall at Hong Lim Market and Food Centre in late 2020. He currently runs the stall with his wife and specialises in western dishes with a local dish, with his most popular dish being his $10 duck confit. The Duck Confit is marinated overnight for 14 to 16 hour, which probably explains how good it is! Due to its overwhelming popularity, it is sold out in a flash every day, so come down early if you plan on visiting!
Signature
Chicken Chop + Laksa Spaghetti, Duck Confit + Mashed Potato, Grilled Salmon + Aglio Olio Spaghetti, Mala Shrimp Spaghetti
Duck confit is a dish that's hard to execute and some high-end restaurants or cafes find it challenging to nail this dish. So, I was curious to see how Eddy’s duck confit would compare to all the duck confits I’ve tried. I’ll admit — I wasn’t expecting much, especially since the dish only cost $10. However, I was blown away after taking my first bite. For one, the duck had a crispy skin while its flesh retained all juices, which was surprising as most duck confit I’ve had were dry both inside and out. If you charged me at least $20, I would have paid for it — it really was ofo restaurant quality! I chose to pair my duck with a side of creamy and this did not disappoint either — creamy, smooth and lump-free, the fluffy mash complemented the savoury components of the duck perfectly. I definitely foresee myself coming back here to try the rest of their dishes!
