Char kway teow is one of those dishes that tourists must-try when they visit, but few places do up an exceptional plate of it. One of the more popular ones in Singapore is No.18 Zion Road Fried Kway Teow that is helmed by Mr Hen Jian Da, who learned the ropes of cooking the dish since he was a young man. And despite taking a 10-year break from cooking it, he eventually gravitated back to it and set up his stall at 18 Zion Road in 2000 and has been there ever since. His usual routine involves waking up at 10am, opening the stall at 12pm and then cooking all the way till 10pm or till he sells out for the day. The queues here can get frightfully long — it can last up to an hour! — so try to come during more off peak periods.

I waited around 55 minutes for my food — when I reached, the queues had snaked all the way out to the main road! Everything is painstakingly fried by Mr Hen himself, which explains the long wait times. The food was sloppily served to me on a plate — a beautiful mess! The noodles are fried in a dark, sweet soy sauce and come laden with ingredients like crispy pork lard, fishcake, bean sprouts and cockles. The serving size was generous and the noodles had a decent amount of wok hei. It also was not too sweet despite the copious amount of sweet sauce, so it was just nice for me. I can see why its so popular — it’s truly deserving of its Michelin Recommendation!
