The outlet at Paya Lebar Square is usually packed with people, so expect queuing for your food. The shopfront is decorated to look like a Japanese restaurant in Japan, but perhaps because of the affordable price tag (considering the location), while it doesn’t give off a classy restaurant vibe, it feels more neighbourhood-like environment, with friendly staff and good food.

Mazesoba is a dry Japanese ramen where you are encouraged to mix the ingredients altogether. There are even steps on how to mix them. Usually served with fish, seaweed, toppings and seasoning, it’s a rather filling bowl for the hungry souls.

For the even hungrier souls, the shop offers a free noodle upsize where you can eat to your heart’s content. While there aren’t a whole lot of variety to choose from, there are options for those who prefer a spicy or non-spicy meal. Each serving comes with hardboiled egg and a bowl of miso soup.

I ordered the Hokkaido Mazesoba with salmon roe, salmon flakes and butter. Added a mentaiko add-on to give more depth and flavour to it. This would be my first time trying a mixed dry ramen and to be honest, I did’t expect much going in. Thinking it would somewhat be the texture of a fried noodle dish, I was pleasantly surprised at how flavourful and wholesome the meal was. The noodles was chewy and thick, nothing out of the ordinary to be honest. But the salmon roe and flakes added a nice salty and umami flavour to the bowl. Perhaps it’s also because of the butter used that gave a creamy-like texture. I’d recommend you to get the mentaiko add-on if you fancy it for added ‘crunch’ and flavour to it as well. It paired really well with the whole mixture, but I’d say it gets a little too rich in the end.

It was definitely something new and I enjoyed my meal. If you hadn’t had a Mazesoba, this is not a bad place to try it out!
