The story of The Sushi Bar is a story of perseverance. The owner, Chef Eugene Heng, apprenticed at a few eateries before trying to start his first F&B venture (that was not The Sushi Bar).

Unfortunately, that did not work out. However, he refused to be defeated by the failure and banded together with his brother, his partner and his partner’s best friend to start The Sushi Bar in 2012. Their first stall was in a quiet corner of Far East plaza and they worked hard to make it work.

Eventually, they expanded into 1.5 more units of their first unit in the mall as business kept growing. They also ended up opening a flagship stall at Ngee Ann City as well as another outlet at Tampines 1.

For fresh cuts of sashimi, wholesome rice bowls and of course, exquisite sushi, The Sushi Bar is the place to be. I arrived at the small on a weekday evening and despite that, the restaurant was already packed with hungry customers — my dining companion and I were lucky to get a seat!

We got ourselves a Kaisen Chirashi Don ($26.90) and the Aburi Sake Mekajiki Mentai Don ($24.90). Both came laden with thick and fresh cuts of sashimi.

The Kaisen Chirashi Don had salmon, tuna, yellowtail, swordfish, seared salmon belly and scallop slices with a generous topic of ikura and sliced tamago. I thoroughly enjoyed the dish and the raw fish were creamy and melted away in my mouth.

The Aburi Sake Mekajiki Don featured seared salmon and swordfish topped up with a generous drizzle of mentaiko. Searing the fish gave them a nice char and smokey touch while the sweetness of the mentaiko sauce helped to pull all the components together.
