Soon Huat Bak Kut Teh was founded by Mr Jabez Tan in 2013. The shop is actually a business of second chance as Mr Tan started it after being released from 12 years of jail for drug and theft crimes. He made good use of his time in prison and worked as a kitchen dishwasher and eventually progressed to become the main prison chef who cooked for his inmates. Inspired by his experience in prison, he decided to grow his newfound passion for cooking and started his own bak kut teh shop. Hoping to give a new lease of life to his fellow criminal friends, he hired other people who dabbled in crimes or those who were homeless. His eatery gave these ex-offenders and former drug abusers a new beginning and a chance to start again.

I personally prefer Malaysian-style bak kut teh — which is more herbally — as compared to the more commonly found bak kut teh in Singapore — Teochew-style bak kut teh — which is more peppery. Each bak kut teh is served in a claypot and comes with a few pieces of pork ribs with soup. You can also opt to add $2 for mushroom and tau kee, which I did. I also added onion omelette, you tiao and otah on the side. The soup base here is milder as compared to other Malaysian-style bak kut teh, which I suspect is to cater more to the local palates, but it still was very flavourful and not too heavy. The pork ribs were also tender with a good meat to fat ratio. I really enjoyed the onion omelette as well and while it’s not the best out there, it had a very nostalgic taste. The otah was good too and had a decent spicy kick. I also came here on a rainy day so eating piping hot soup in the cold weather felt good.
