One Prawn Noodle was opened in May 2019 and is helmed by Gwyneth Ang who studied culinary education at Temasek Polytechnic and The Culinary Institute of America before joining Michelin-starred restaurants Forlino and Burnt Ends, where she worked for almost 10 years. As her mother is from Penang, Malaysia, she grew up eating Penang-style prawn noodles that have a spicier broth as compared to our local rendition of the dish. Thus, she incorporated this into her prawn noodles at One Prawn Noodle alongside a Japanese-style ramen broth. Her stall also serves elevated bowls of prawn noodles which contain premium ingredients like abalone.

I ordered the Supreme Big Prawn ($10) and this was whipped up by Gwyneth herself. There was so much food that she had to split up my food into two separate bowls! What really blew me away immediately was the broth and it is honestly one of the best prawn-based broths I’ve ever had to date. This was packed with umami and very rich — you can tell that it had been simmered for hours! Apparently, Gwenyth also washes and blends the prawn heads multiple times to extract the full flavours, which you can definitely taste in the soup. The prawns provided were also massive and very juicy, adding a nice crunch to the dish. I also love the prawn balls which were bouncy and provided a good bite. To give the dish a little Penang-style twist, she also adds kang kong which is an interesting touch that I quite like! Overall, it really is one of the better prawn noodles in the market and I definitely can foresee myself coming back here!
