Pao Fan means cooked rice soaked in broth - not quite the congee porridge but rather the Teochew style of having rice submerged in soup. King of Pao Fan has an ex-Raffles Hotel chef and past Chinese restaurant chefs to cook up bowls of delicious rice dishes. There are seven options including fried fish, sliced fish, mixed fish, prawn, seafood, clams and even lobster!

To make the porridge as grainy as possible without overcooking them, the rice grains are soaked in water or stock then steamed to give that perfect soft-and-grainy perfection. The broth is cooked with ingredients like prawn shells and pork bones to give that full-bodied flavour.

There are two outlets - one at a hawker centre near to Bugis+, and the other at Eunos Crescent. However, the branch at Bugis closes rather early, earlier than the packed dinner time.

I had never heard of King of Pao Fan before this. I have seen long queues of people wanting to get their hands on one of those delicious bowls, but I have never thought to try it. And I am glad I did because this place is definitely going to be one of my most-frequent stalls.

To think that for a bowl of rice and soup, an average price of $7 might sound expensive, but when you have tasted the first bite, you’ll realised it’s very worth the price. For the amount of ingredients and knowing the tedious cooking process behind it, it’s actually affordable. I ordered the Sliced Fish Pao Fan and was served within 15 minutes, with a good amount of sliced fish, fried egg floss and spring onions sprinkled in the yellow-orange thick broth. The soup, or broth has a strong umami taste that is flavourful and very tasty. The hearty feeling when you eat a warm bowl of goodness during a rainy day. I’ll definitely be back for the lobster and other seafood dishes.
