Skirt and Dirt stands out in Tiong Bahru Market for its black and modern shopfront, as well as their selection of burgers. Founded by Fabian Tan who was a chef at One Faber Group, he opened up his own shop in August 2020 with a range of burger options with the signature being the Cheese Skirt Beef Burger. There is an option to top up to a set with fries and salad as well. If you fancy, go for a soup or the Dirt Fries which comes with pickled relish topped with mayonnaise and cheese sauce.

You don’t often find cheese skirt at hawker places, so this is the best place to try the crispy cheese sheet at an affordable price. The meat patties are sourced from a local butcher, which explains the meaty and flavourful burgers. From time to time, Tan and his team changes the menu to seasonal flavours so as to give customers a variety of options to choose from.

I hadn’t had cheese skirt before, so trying it was definitely quite the eye-opener. It was crispy, cheesy and salty, but such an interesting way to enjoy a burger. I had the Cheese Skirt Beef Burger and I thought it was an enjoyable lunch.

When it comes to burgers at hawker centres, one would think the menu has to be a little cheaper - after all the crowd are looking at something below $5 for a meal. However, I’d say you are paying for a really decent portion of burger and at an affordable price. Plus, these young chefs do know their burgers really well, cooking up juicy beef patties that pack a punch.
