Yan Ji Seafood Soup was first established in 1984 and started out as a humble hawker stall in Woodlands. It eventually opened a stall at Marsiling Mall and Marsiling coffee shop before expanding to have a few more stalls scattered across Singapore, including the famous shopping district Orchard Road!
Its founder, Ah Wee, concocted an extremely rich, umami-filled soup base by combining a mix of 15 premium ingredients such as dried Hokkaido scallops from Japan, fresh chicken and prawns. This is then simmered overnight to develop its intense and robust flavours. It's also is cooked with a special searing technique akin to traditional restaurants, which gives the soup an additional wok hei (smoky) taste. Definitely not something you can find easily in the Singapore food scene!

I am a huge fan of seafood soup so I was excited to try out what Yan Ji Seafood Soup had to offer, and I’m glad to say that I was not disappointed. I got the Crayfish Seafood Soup and while some may find its price point of $13 a little on the heftier side, this is well-justified by the quality of the soup. If you had served this to me blind folded, I’d honestly assume that this was from a restaurant!
Based on just the soup’s colour, you can tell that it had been simmered for hours to bring out all those complex flavours. And I was right — the soup had a full-bodied, robust flavour that was packed with umami thanks to the seafood added into the mix. Soup aside, I was also thoroughly impressed with the amount of ingredients that came with it such as fish, prawns, meatballs and of course, two massive crayfish. I’d say that $13 is an absolute steal.
Despite living very far away from Marsiling, I’d definitely come back again for this soup!
