Mr Beng Peng was just 18 years old when he moved to Singapore from China. Here, he worked at fine dining restaurants and a Spanish tapas restaurant before deciding to open his own store at Golden Mile Hawker Centre in 2019. Using the skills he picked up at his previous places of employment, he now dishes out high-quality restaurant standard food at his humble hawker stall. Here, he sells western food as well as Japanese-style pasta. He also sources quality ingredients for his dishes, which you can clearly taste in the food. For instance, he gets his pasta from Japan itself and he uses Ribeye from both New Zealand and Australia.

I was beyond impressed by the quality of food here at Fudo and I truly feel that this is an underrated gem that more people need to know about. The Prawn Miso Angel Hair, a dish that is served dry, features al dente angel hair pasta that is cooked with a miso and chilli oil sauce. This was tossed with small chunks of prawns, seaweed and green onions. Though a simple, unassuming dish, it was packed with flavour and had a good balance of saltiness from the miso and spiciness from the chilli oil. On the other hand, the Spicy Mentaiko Spaghetti is a cream-based pasta where al dente spaghetti pasta is cooked in a rich cream sauce and topped with a generous dollop of mentaiko sauce. The dish also comes with fresh clams and a sprinkle of bonito flakes. The flavours were not too heavy on the palate and you get a subtle spiciness from the mentaiko, which was a nice contrast to the sweet creaminess of the sauce.
