Ng Kuan Chilli Pan Mee has a few outlets in Singapore, serving KL-style ban mian with interesting side dishes like the Fried Chicken Cutlet and Fried Pork Slices to go with your meal. Their signature Dry Ban Mian is the one most people go for. There is a reason why they have the word ‘chilli’ in their shop name as it can be really spicy. They do serve a generous portion of chilli on the side, but my advice is to do a quick taste test before mixing it with your noodles.

The place is is bright and clean despite being just right next to the main road. However, it does get a little noisy in the evening as cars drive past you. The stallholders are a bunch of young man who are often singing along to their Cantonese and Chinese music that blasts through the stall, creating quite an upbeat and enjoyable atmosphere.

Ban Mian (Dry)

The presentation of the dry ban mee was rather standard, but the main thing I took away from my meal there is to always test out the spice level of the chilli before mixing it with my noodles. I just mixed whatever I was given and it was so, so spicy.

The noodles was chewy and smooth, and I loved how crispy the ikan bilis were. The dish itself doesn’t have a strong flavour as a whole, but when mixed with the runny egg, chilli and marinated minced meat, there is a distinctive taste to it. Of course, the chilli adds a nice punch to the overall sweetness of this dish. A very hearty meal for anytime of the day.
