Adam Road Noo Cheng Big Prawn Noodle has been at Adam Road Food Centre for over 30 years and is one of the most popular stalls there; it even has been listed in the Michelin Bib Gourmand! The stall was opened by the Teo family and currently, the family business is owned and managed by the son of the founders, Mr Teo, who has mastered the family’s secret recipe. He has been there since they first started the shop when he was 16 years old and one can really taste the years of his experience in each bowl. You can also check out their second outlet at Zion Riverside Food Centre, which was first opened around 15 years ago. Do try to come during non-peak hours as the queues here can get quite ridiculously long!

There’s a reason why people are willing to queue so long for the food here. They arguably have one of the best prawn noodles in Singapore; all you need to do is try one bowl to understand why. Their Big Prawn Noodle ($10/$12/$16/$20) is their star menu item and while the price tag is a little on the heftier side, it’s well worth it. Each bowl comes with noodles of your choice, pork ribs, pigskin, vegetables and massive prawns that are doused in a generous amount of their famous broth. The soup base alone is enough to get you addicted; it’s extremely rich and packed with sweetness and umami from the prawns used. You can also tell how fresh the prawns are just by looking at them. Each piece has been sliced open for easier consumption and the meat is springy, crunchy and very sweet. They also are very generous with the amount of pork ribs provided and these were surprisingly very chunky and tender. I’m not a fan of pigskin but if you are, the ones here are soft and thinly sliced so you can slurp them up with your noodles. If you want to add a little heat to your dish, you can add some of the provided chilli sauce, but honestly, it isn’t really necessary as the soup is good on its own.
