There are too many stalls at Tekka Market, so standing out to get the customers over to your stall may seem like a daunting task for any hawker stall holders. But for Jasmine Pork Rib Prawn Noodles, it seems like the queue for a bowl of fresh and hearty noodles is what makes customers go back for more.
The stall owners are rather friendly, the lady server especially, who takes orders prior to your turn so that the male chef making your noodles will be able to speed up the process. While some other options like Pig’s Tail Noodle or Pig’s Intestine Noodles are not available anymore, their signature prawn noodles and prawn noodles with Pork Ribs are still very much available for your delight. Sadly, no options for big prawns, but do get the chili if you are someone who likes a hint of spice to your prawn noodles.
When it comes to price, it is still relatively cheap, starting with $3.50 per bowl for the normal prawn noodles. For the pork rib options, it starts at $5.00, whether dry or soup options.
It’s not easy to cook a good broth of prawn noodles soup base because of the sheer amount of prawns involved, as well as the hours of simmering to get the umami taste out. For this stall, the soup was thick and rich, and had a strong umami aftertaste. I ordered the Prawn Noodle soup and despite cooking it with the yellow noodles, it was still flavourful. Also a tad peppery.
Served with 4 halved slices, meat slices and a strand or two of vegetables, I would say it is a normal portion that you’d see with other hawker stalls as well. Prawns were fresh and chewy, not really chunky as one would hope, but definitely has the sweet taste. It gets a bit salty after a while, but the spice helped in terms of that added layer of flavour. Also, ask for more lards if you love it!
