The owner of this stall, Uncle Soon, knows all the in and outs of cooking Hokkien mee as the man has been frying up plates of these for over 50 years. He first delved into the hawker scene at the tender age of 16 and started off by helping his mother make fishballs. Eventually, he moved on to perfecting his art of frying up aromatic plates of this Hokkien mee that is loved by many. The hawker business is no easy line of work and Uncle Soon is out of bed by 4am every day and starts work by 5am. They only close the shop around 10.30pm in the evening and the cycle repeats itself. While the cycle sounds monotonous and boring, the couple have become used to it and say that at their age, this is all they can do to survive.

Out of the two Hokkien mee stalls at ABC Brickworks, I prefer the food from this one more. The stock used, in my opinion, is significantly richer and packed with more umami. The dish also has a decent amount of wok hei that was evenly distributed throughout the dish. The ingredients — squid, prawns, lard— that are tossed into the mix aren’t the most premium, but these were decent and plentiful so you get a little bit of something in every bite. For a little more zest to cut through the greasiness, you can also squeeze a bit of the provided lime over the dish.
