Prawn & Mee is helmed by Gladwin Yap and Raphael Sim, the same people who were behind Plum & Rice, which specialised in pickled plum porridge. They both graduated from the Culinary Institute of America (ICA) so they know their way in the kitchen pretty well. The reason behind changing their brand’s concept was to cater more to the elderly people who frequent Bedok 216. As prawn mee is a more familiar, traditional dish, they thought it would be a good idea to serve that instead. For the recipe, they used one that was passed down from Gladwin’s family to him and from there on, they improvised by using western techniques.

I wanted to get the soup version of the Pork Ribs Prawn Noodle Soup but alas, by the time I hit the front of the queue, they were out of pork ribs. Hence, I went for the Prawn Noodle Soup instead which came with sizeable prawns. One thing I appreciate was how the prawns were partially peeled, leaving the head intact, which allowed me to easily peel the rest of the prawn while still allowing me to suck on the heads (prawn lovers, you would understand this!). Soup-wise, the broth was on the lighter side which is great if you don’t like heavy flavours. I can imagine how good this would taste with some pork ribs so i’ll try that the next time I am in the area!
