While char kway teow is a commonly found dish in Singapore, some places are more popular than others and one establishment is Hill Street Fried Kway Teow.

Not only does the stall has a Michelin Plate, it has been praised by a number of notable people like Anthony Bourdain. It has also been featured often in the media..

The stall was founded by Mr Ng Chang Siang and after he passed away, his son and aunt took over the business to continue the legacy.

They only sell one dish (and only need to sell one dish), which is char kway teow. Each plate costs just $4.

Despite coming at an off peak timing of 3pm, the stall already had a snaking long queue. In fact, it was the only stall in the hawker centre that had a queue at that hour.

I waited around 20 minutes for my food and I'm happy to say that it was well-worth the wait. The char kway teow here is all fried freshly before your eyes upon order and I was mesmerised watching the hawker work his magic at the wok.

Chock full of plenty of wok hei, the dish had just the right balance of sweet and savoury. It was also chock full of ingredients like sausage, cockles and beansprouts. I can see why people would queue so long for it!
