Changi Village Fried Hokkien Mee has four outlets across Singapore, with the original, of course, being at Changi Village.

All ingredients and the rich praen soup stock comes from the central kitchen and is made by the owner himself so that everything remains consistent.

The only difference is the person frying the noodles. The outlet at Changi Village is manned by a few men who expertly fry the noodles in front of your eyes.

There is only one dish here — Hokkien mee — and this comes in various sizes. You can also share the bigger portion with another dining companion!

Don't be fooled by the lack of queue at the stall — there is usually a very long line, just that no one waits at the stall and comes back later to get their food!

When I finally collected my plate of noodles, my first impression was that the portion size was very large and generous. Across the board, this is similar to the other Changi Village Hokkien Mee around Singapore.

The Hokkien mee here is on the wetter side and was soaked in the rich prawn broth. With each serving comes a generous amount of pork belly and sotong (squid), which adds a decent amount of texture and flavour with every bite that you take. The dish, of course, also comes with prawns, which were already peeled so you don’t have the hassle of having to do so yourself.

I also love the sambal which was slightly sweet, pungent and not too overwhelmingly spicy. Mix it in with the noodles for a completely different flavour!
