One of the owners of Bai Nian, Amy, was hospitalized a few years ago and had strong cravings for yong tau foo. The rendition at the hospital was bland and unappetizing, so her husband, Andy, took it upon himself to prepare yong tau foo for her according to her preferences. As she was not a fan of traditional Hakka-style yong tau foo, he came up with a different version which featured smaller sized pieces that were tender, tastier, yet healthier than your conventional yong tau foo. This involved mixing different types of pastes that are made with ingredients such as prawn, pork and fish. In 2013, Andy decided to switch careers and opened his first Bai Nian Niang Dou Fu outlet at Albert Centre. As it grew in popularity, they have expanded the business so that more people can enjoy their delicious food.

The Yong Tau Foo Set (S$6.30) here is their best selling item and it features a piping hot bowl of bee hoon and yong tau foo soup with a side of fried chicken. Each bowl comes with a colourful and exciting variety of yong tau foo pieces that are made from a mixture of different pastes. While I found all the yong tau foo here delicious, the ones that were made with prawn paste were my absolute favourite. You can tell that they use fresh prawns just from the texture and taste of it and each piece was springy, crunchy and packed with umami. There is also only one noodle option, which is bee hoon, but I feel that that is good enough for me as the texture goes really well with the yong tau foo. All this is doused in a light, clear soup that does not overwhelm the flavours of the yong tau foo pieces. I was also pleasantly surprised by the fried chicken. The man in charge of those made it a point to fry them up fresh for me on the spot so that I could enjoy the fried chicken in all its glory. The chicken was coated in a fragrant batter and was insanely crisp and crunchy. Despite being freshly fried, it was not very greasy, so it did not leave your palate feeling overwhelmed. It definitely added a nice contrast to the light yong tau foo bee hoon soup component!
