Kallang Cantonese Live Prawn Noodle has been around since 1973 and is owned by Seow Poh Chio and her husband. The stall has been around for 3 generations and was passed down from her grandfather to her father and then to her when she finished her studies. The shop used to be at Geylang but they eventually moved to their current space at Old Airport Road. When they used to be at Geylang, they used only traditional ingredients such as pork slices, prawns and fishcake. Eventually, they decided to add live prawns to their menu, which was inspired by their love for fresh, live prawns in seafood restaurants. They use tiger prawns in their popular bowls of Live Prawn Noodles and these all are supplied from Malaysia. It is delivered fresh every morning by their supplier and these are put into a massive tank just at the front of the store so customers can watch the prawns get caught right before their eyes.
Most prawn noodle places dish out measly sized prawns that barely have any meat on them, but this is not the case at Kallang Cantonese Live Prawn Noodle. The stall uses tiger prawns which are significantly bigger, chunkier and juicier than your regular prawns. These are brought in every morning from their Malaysian supplier so the freshness is guaranteed. Sweet, juicy and crunchy, the usage of live prawns in the dish really makes a massive difference and the prawns are truly the star of the dish. The prawn noodle soup base is also sweet, savoury and packed with plenty of umami that comes from 3 to 4 hours of simmering of pork bones and prawn heads that have been fried with garlic and dried shrimp. Noodle wise, you can choose between yellow noodles, bee hoon, or a mixture of both together. Do note that the Live Prawn Noodles are only served after 11 am as that is when the prawn supplier delivers the live prawns. However, before that, you can still order other of their menu items such as their regular bowls of Pork Rib Prawn Noodles.
