Whitley Road Big Prawn Noodles has three outlets in Singapore — Old Airport Road, 272 Thomson and 36 Circular Road (now closed). Out of the three, only the outlet at Old Airport Road has the Michelin recommendation. The exterior of the shop is plastered with awards, newspaper clippings and accolades, a testament to the quality of food they have to offer. The queues here can get quite long but thankfully, they provide each customer with a buzzer so that they don’t need to wait around the stall for your food and can just come and collect it when it’s ready. Apart from prawn noodles, they also have other options such as pigs tail noodle, pig liver noodle and pork rib noodles.

I got myself a bowl of their classic Big Prawn Pork Ribs Noodle for $5.50. You can opt to have it with soup or dry and I decided to have mine with soup. Despite ordering the smallest size, the portion was generous and enough for me. I was pleased to find that the soup was very rich and packed with umami thanks to the prawns, and just from the stock alone, you can tell that fresh prawns had been used. The actual prawns in the dish were extremely succulent and juicy as well and I appreciate how the store owners had sliced the prawns down the middle into two, making it easier to eat. The pork ribs were the surprising factor for me as I had higher expectations of the prawn and stock, but the ribs were massive and very tender! There was also a decent meat to fat ratio which prevented the texture of the meat from being too dry. I can understand why these prawn noodles are so popular now!
