Garden Street Kway Chap was founded in the 1940s by current stall owner, Jason Koh’s father. He took over the stall in 2005 after leaving his high-flying pilot job. Because of his interesting job-switch, he has been featured in many television shows such as Hawker Academy. While the store has workers, Jason himself can be seen meticulously cutting, preparing and arranging the food himself. Apart from how popular the kway chap is, this also explains why waiting times at the stall can be quite long. Everything is prepared fresh before your eyes and the brown soup base for the kway (flat rice noodles) and is a secret home recipe made with 15 ingredients that is boiled for around 2 hours — talk about effort! You can also opt to get portion sizes for one or two pax.

You don’t have to like offals to eat at Garden Street Kway Chap as they also sell sets that come without it, such as the one that I got which features sliced braised eggs, tau pok (beancurd), hard tofu, pork belly slices and fishcake. I was very impressed by how fresh the ingredients all were, especially the pork belly, which did not have a very strong smell. The ingredients were doused in a very light soy sauce, which was a nice chance compared to the heavy braising sauce that other kway chap stalls tend to use. The kway was also fantastic — slipper yet retaining a slight al dente texture, these soaked up the unique soup perfectly and paired well with the various ingredients. I also have to highlight the provided chilli as it packed a punch without being too overwhelming — perfect for people like me with low spice tolerances.
