Teochew St. Mushroom Minced Meat Noodle

The stall here is always seen with people queuing up for a bowl of noodles. When we arrived slightly after the lunch hour, there were still about 5 people in front of us. The stall has been around for quite some time now, and is known for their handmade fishball and meatball as well as the springy noodles.
The shop is spotted with a few newspaper and magazine clippings, but a quick search tells you that this stall stands out among the huge Chinatown Complex Market, which houses about 100 stalls selling a variety of food and drinks. Each bowl is made to order but you can tell that the stall owners are very experienced with the operation of the stall as bowls and bowls of noodles are served rather quickly despite the laborious effort.

I ordered the Bak Chor Mee with chilli and was satisfied with my bowl of noodles. While a part of me was hoping the portion could be a little bigger, I thought the ingredients served were actually quite generous as compared to a few other stalls that I’d patronised. Considering the fact that each bowl comes with their handmade balls, made it worth the price.
The noodles were cooked really well and with the chilli coating the noodles, I thought it was quite the perfect texture - springy and chewy, but could do a little less of the oil. The soup was a little salty for my taste, but I thought it complemented the noodles well.
