Situated at Chinatown Complex Market and Food Centre, Fei Ye Ye Food Tradition is one of the popular stalls there, known for their springy wanton noodles and dumplings. Run by a husband-and-wife pair, the couple prepare the bowl of noodles fresh everyday, making their dumplings by hand, as well as cooking the pork lard used in the noodles.

The soy sauce chicken noodles is another highlight to choose from as the chef learnt in during his time in New York City in the early 1990s when he was working at a Chinese restaurant. Despite the long wait and countless of customers that we served before me, the staff maintained a friendly attitude when they asked for my order. The opening hours cater mainly to the lunch crowd, so be sure to head there early.

I ordered a plate of soya sauce chicken noodles and it came with rather generous portion of noodles with huge slices of chicken, along with some vegetables.

More than the springy and chewy noodles, I enjoyed the sauce that has been mixed with the noodles. The soya sauce chicken was tender and packed so much flavour on its own. While there is a tendency for dishes that offer soya sauce option to get a salty, I thought Fei Ye Ye Tradition managed to find the right balance. While it gives that hint of saltiness, I didn’t feel overwhelmed with it. I’ll be back for the dumplings soon!
