Changi Village Fried Hokkien Mee has 4 outlets across Singapore, with the original, of course, being at Changi Village. All ingredients and the soup stock comes from the central kitchen and is made by the owner himself so that everything remains consistent. The only difference is the person frying the noodles. The man who works at the Toa Payoh outlet has cooked at this stall for quite some time and he has also been in the hawker industry for many years. This can be seen in how he expertly fries the noodles right in front of your eyes. Occasionally, his wife and son help out with the business.

When I collected the plate of noodles, my first impression was that the portion size was very large and generous. The Hokkien mee here is on the wetter side and was soaked in the rich, umami-packed broth. You can also really taste the wok hei in this plate of Hokkien me. With each serving comes a generous amount of pork belly and sotong (squid), which adds a decent amount of texture and flavour with every bite that you take. The dish, of course, also comes with prawns, which were already peeled so you don’t have the hassle of having to do so yourself. I also really loved the sambal which was slightly sweet, pungent and not too overwhelmingly spicy. Mix it in with the noodles for a completely different flavour profile altogether!
