Most people will judge on how well the food is from the stall, based on how long the queue is. Sometimes, it's because of how fast or slow the chef is, or sometimes it's really because business is booming.

However, for Hock Huat Fried Kway Teow, it's more than that. The stall essentially only serves 1 dish - Char Kway Teow, and it's often spotted with a long queue. This is quite the testament to how good the food is.

Mend by just 1 old lady who cooks, gathers orders and collects the money, so definitely thats takes a longer time. But considering how great the food is and very affordable, I'd say it's worth it. Don't think about chatting with her as she is busy, but never too rude.

Option for large or small, and option for spicy or not. If you don't like cockles, do let the aunty know beforehand too.

When it comes to char kway teow, it is all about the wok hei charred taste, just that hint and aroma, something that gives that extra oomph to the plate.

Of course, the kway teow has to be chewy, which this plate delivered. Each strip is covered with the black sauce, which gives that sweetness to it, paired with the Chinese sausage as well as beansprouts that adds textures to it. The shreds of fried egg also adds to the sweetness to it.

Overall, this plate of char kway teow is very full-bodied, and the smokey flavour is what makes this stall a very popular one, especially during peak meal timings. Also, a reminder to be nice to the aunty, for she never stops to work to produce these little plates of gems one after another.
