The name of the shop, Matasoh, has an interesting background. Many years ago, the main lady behind this family-run business, Mrs Soh, was a hawker whose business experienced plenty of disruptions from secret societies. Fed up with this, she rallied together a few hawkers to work together with the police to protect their businesses as well as themselves. Thanks to her idea, these hawkers were harassed less and she was nicknamed ‘Matasoh’, with ‘Mata’ being Malay for police and ‘Soh’ being her surname. The business is now run by her family. Initially, they started their own fish ball-making business and supplied fish balls to various hawker stalls across Singapore. Eventually, the family was inspired by Mdm Soh’s hawker life and decided to go back into the hawker scene again, where they fondly named the venture after Mrs Soh’s nickname, Matasoh.

I tried the Soh Special Onsen Egg Noodles (S$4.50). Every component of this bowl of fishball noodles is extremely well-executed and there was nothing that I found lacking. The fish balls, which are the star of the show, were some of the best handmade ones I’ve tried in Singapore. You can truly tell the difference between these fish balls and the factory produced kind; the handmade ones are slightly misshapen but firmer, juicer and packed with more flavour. Matasoh also makes their fish balls with 100% yellowtail fish meat, which gives it a very distinct sweetness that I don’t think you can find with any other type of fish ball in the market. The noodles, on the other hand, were springy and had just the right amount of chewiness to it. Each bowl also comes with a jiggly onsen egg, which is something that you rarely come across when it comes to fishball noodles. Break open the egg and mix it into the noodles to give it a creamier texture.
