The dumpling skin is a little thicker than your usual xiao long bao skin, but at the same time, it was not too doughy. I found that I actually preferred it this way as it gave the entire xiao long bao a chewier texture as well as more bite. The meat filling was very generous and juicy and when you break into the dumpling, a substantial amount of soup flows out. It is of restaurant quality and if you had served these to me and not have told me that they were made by a hawker, I honestly would not have been able to tell the difference!
