Yan Ji Seafood Soup was established in 1984 and had humble beginnings as a hawker stall in Woodlands. It eventually opened a stall at Marsiling Mall and Marsiling coffee shop and now, they even have a stall at Far East Plaza in Orchard Road!

Its founder, Ah Wee, concocted a rich, umami-filled soup base by combining a mix of 15 premium ingredients such as dried Hokkaido scallops from Japan, fresh chicken and prawns. This is then simmered overnight to develop its intense flavours. It's also is cooked with a special searing technique akin to traditional restaurants, which gives the soup an addictive smoky taste — not all soups are cooked this way!

I was excited to find that Yan Ji Seafood Soup has a stall in town since the original stall is located very faraway in Marsiling. The price of the food here is a little heftier than other seafood soup joints but this is well-justified by the quality of their soup — you have to try it for yourself to believe it!

Based on just the soup’s colour, I could tell that it had been simmered for hours to bring out all those complex flavour and the soup had a robust flavour that was packed with umami thanks to the seafood added into the mix. Soup aside, I was also thoroughly impressed with the number of ingredients that came with it such as fish, prawns, meatballs. I've tried the soup from the original stall and the flavours are rather similar so it means that they are consistent across all their stores!
