The thing about Soba is that soba is a wonder food which has low in calories with the added bonus of lowering blood pressure and aiding digestion.
Shimbashi Soba, located at the basement of Paragon Orchard, the restaurant is a popular eatery spotting long queues at numerous time belts, especially during popular meal times. This restaurant is known for its freshly-handmade soba, including the milling of the buckwheat flour. If you are lucky, there are even areas where you can spot masters at work.
Apart from soba choices – whether hot or cold, there are other sides like tempura choices, rice and your usual Japanese fare. There are also seasonal flavours and menu items if you fancy something to shake up your tastebuds.

I had to wait about half an hour to get a seat at Shimbashi Soba as I went during the prime lunch time belt. The restaurant was already filled with customers when I reached the mall, but considering the size of the restaurant (it wasn’t too large an area), and the quality of food served, I thought 30 minutes was a fair amount of time. Service wasn’t great as I do think they are short-staffed, but the waiters there maintained a good and smiley disposition despite the meal crunch time.
I didn’t think it would be anything superb about soba, but I do have to say that the soba here is light, tasty and knowing at the back of my mind that it’s healthy does help. I ordered the lunch set that came with soba, a side and a cup of drinks. The warm soba was chewy, and breaks easilty with each bite, has a wheat-like taste, with a slight aftertaste sweetness, something different compared to the normal soba that I’ve had in the past. The broth, or the soup was light but salty, making it a perfect broth for the soba to be served in, but perhaps not a bowl of soup to gulp it down.
Will probably head down for its nice ambiance and good food.
