Thanks to Hototogisu Ramen, Singaporeans can now get a taste of authentic, Michelin-starred Japanese ramen without having to hop onto a plane. Hototogisu was founded back in 2006 by Tokyo chef Atsushi Yamamoto. Chef Yamamoto himself was awarded the prestigious Tokyo Michelin Bib Gourmand title from 2015 to 2018, while Hototogisu Ramen was crowned the “No.1 Ramen in Japan” in 2017 and 2018 by Ramen Walker.

Hototogisu has multiple outlets islandwide, but the Great World City outlet is special as it has oyster ramen, which is exclusive to this outlet. This comes in two versions — Oyster Shio Ramen and Oyster Paitan Ramen.

I’m a huge fan of oysters, so I was curious to see how it would fare in the form of a ramen dish. I went for the Oyster Paitan Ramen which is the creamier rendition out of the two. It is said that the broth is prepared by slow-cooking oyster consommé at a lower temperature for a number of hours before roasted paprika is added for a stronger flavour.

And while the dish did indeed have a very rich flavour, it was not too cloying nor heavy on the palate, making it easy for me to finish every drop of soup. It also did have a distinct oyster taste but this was not too overwhelming. I quite liked it! I wouldn’t mind coming back to try the Oyster Shio Ramen, which is meant to be the lighter version.
